The Brook Catering Co. at Willowbrook provides students with real-world culinary experience

On Feb. 29, The Brook Catering Co. (which is comprised of Willowbrook culinary students) hosted a luncheon for staff members.

The event took place in the school’s Willows Dining Room and featured:

  • A pear salad with balsamic vinegar and walnuts and a slice of freshly baked French bread

  • An entrée of chicken and broccoli pasta (or without chicken for the vegetarian option) and a baked sweet potato served with creamy butter  

  • A dessert of carrot cake, with a topping of rich cream cheese frosting

Through The Brook Catering Co., students enrolled in Culinary Arts 3 – Catering learn about event planning, scaling recipes, ordering groceries, figuring costs in a lab setting and working with clients to determine themes and menus. The course prepares students for careers in the food service industry, catering and nutrition/menu planning. Students in this program earn dual credit, have an honors option and are certified ServSafe safety and sanitation managers.
