The Brook Catering Co. at Willowbrook provides students with real-world culinary experience

On March 20, The Brook Catering Co. (which is comprised of Willowbrook culinary students) hosted an Italian Luncheon for staff members.

The event took place in the school’s Willows Dining Room and featured:

  • Ribollita soup (a hearty and rustic Italian comfort stew)

  • An entrée of handcrafted gnocchi coated in a creamy tomato sauce (or a vegetarian/gluten-free option of pomodori al riso, a dish comprised of tomatoes stuffed with flavorful rice)

  • A dessert of Italian tiramisu (or a vegetarian/gluten-free option of handmade mango gelato)

  • Drink service of lemonade, iced tea, tea, soda and coffee

Through The Brook Catering Co., students enrolled in Culinary Arts 3 – Catering learn about event planning, scaling recipes, ordering groceries, figuring costs in a lab setting and working with clients to determine themes and menus. The course prepares students for careers in the food service industry, catering and nutrition/menu planning. Students in this program earn dual credit, have an honors option and are certified ServSafe safety and sanitation managers.
